February is National Heart Month. Heart disease is the number one killer of women in the United States, and the number 3 killer of all persons overall.
Ashley Anderton of Fairhope is the Administrative Assistant for the Fairhope and Foley offices of Cardiology Associates. Even before she started working with cardiologists, she had personal experience with heart disease. Ashley was born with a congenital heart defect, and has had a pacemaker since she was only 6 months old. “I am pacemaker dependent,” 25 year old Anderton says. “I live a normal, healthy lifestyle, but I have always been careful of what I eat.” She knows that living a heart healthy lifestyle is something that anyone can do, and encourages people to try to make small changes during February, National Heart Month.
Changes can include becoming more active, eating healthier, or getting your blood pressure and cholesterol tested. Anderton likes to cook, and says it is fun to experiment with recipes. One of her favorites is Honey Mustard Barbeque Chicken. It’s perfect because it can be grilled, and it is especially easy because it has only a few ingredients.
Honey Mustard Barbeque Chicken
½ cup Dijon mustard
1/8 tsp dried thyme
3 tbsp vinegar
4 chicken breast halves, bone in, skinned
4 tsp Worcestershire sauce
2 tbsp honey
Marinade: Combine mustard, vinegar, Worcestershire sauce and thyme. Mix together until smooth. Place chicken in a plastic bag and pour marinade over chicken. Marinate from 4 to 24
hours. Drain and reserve marinade. Set aside 1/3 cup of marinade for sauce.
Chicken: Place chicken bone side down on a hot grill with an oiled rack. Cover and grill until
chicken is no longer pink, brushing occasionally with remaining marinade.
Sauce: In a small saucepan, combine the 1/3 cup of reserved marinade and honey. Heat to
boiling. Reduce heat and simmer, covered, for 5 minutes
Serve chicken with sauce.
