Whipped Sweet Potatoes
6 sweet potatoes
1/2 tsp. pepper
6 carrots
1/4 tsp. nutmeg
10 tbsp. evaporated skim milk
2 tsp. butter sprinkles
Cook potatoes in microwave 10 minutes. Continue microwaving 1 minute at a time until they are
soft. Set aside. Peel carrots, slice and place in 2 tablespoons of water, a microwave safe bowl,
covered with plastic wrap. Cook 5 minutes in microwave or until soft. While carrots are cooking, peel sweet potatoes. Combine vegetables and other ingredients. Mash vegetables with a potato masher or puree in a food processor. If too thick, add more milk to desired consistency.
