Pumpkin Cake or Muffins

1 1/2 cups sugar
2 tsp baking soda
16 oz. can crushed pineapple
1 tsp. salt
6 egg whites
2 tsp. cinnamon
16 oz. can pumpkin
1 tsp. pumpkin spice
2 cups all-purpose flour

Preheat oven to 350 degrees. Mix sugar, pineapple, egg whites and pumpkin together in a large bowl. Add dry ingredients. Spray a bundt pan, a 9 x 13 pan or 2 muffin tins with nonstick
cooking spray. Pour in batter and bake for one hour.

1 cake serves 10
