Crockpot Turkey - A Recipe for Holiday Leftovers

1 turkey thigh or breast, boned, skinned
2 cloves garlic, minced and cut into 1” cubes
2 tbsp lemon juice
1 peeled ripe tomato cut into 1” cubes
1 tsp. dried Italian seasoning
1 green pepper, thinly sliced
2 stalks green onion, chopped
2 1/2 tsp. cornstarch
Pepper to taste

Combine all ingredients except turkey and cornstarch in a crockpot. Cook on high 30 minutes.
Add turkey, reduce heat to low and cook for 8 to 10 hours. Sauce may be thickened for serving
over pasta or rice. Mix cornstarch with 3 tbsp. of water and stir into sauce. Bring to a boil,
stirring until thickened.
