New Year’s Day Black Eyed Peas

1 lb. dried black-eyed peas
1 bay leaf, crushed
Water to cover
3 garlic cloves, crushed
1/4 lb. Canadian bacon
1/4 tsp. cayenne pepper
2 large onions (1 chopped, 1 quartered)
1 6 oz. can no-salt tomato paste
3 stalks celery, chopped
Freshly ground black pepper, to taste

Rinse peas thoroughly and place in a large saucepan. Cover with water and soak for 45 minutes. Cook Canadian bacon in a skillet until crisp. Remove from skillet and drain on paper towels. Chop and set aside. Drain peas and return to the saucepan. Add fresh water to cover. Add bacon and all other ingredients. Bring to a boil. Reduce heat, cover and simmer for 3 hours or until
tender. Serve with Tabasco sauce to taste.
