Mustard Marinated Chicken
1/4 cup Dijon mustard
4 to 6 boneless, skinless chicken breasts
1/4 cup brown sugar
1 tbsp. country crock light
1/4 cup bourbon
1 tbsp. canola oil
½ tsp Worcestershire sauce
3 tbsp. chopped purple onion
½ tsp salt
Mix together the mustard, brown sugar, bourbon, Worcestershire sauce, onions and salt. Wrap
chicken breasts in plastic wrap and pound to about 1/4" thick. Marinate the chicken breasts in the mustard mixture, covered in the refrigerator, for one hour. Drain and reserve the marinade.
Heat the margarine and oil in a large heavy skillet over medium-high heat. Add the chicken and
saute’ for 3 to 4 minutes on each side until golden brown. Remove chicken from skillet and pour
out oils and juices, but don’t wipe skillet clean. Pour the reserved marinade into the skillet. Stir constantly as you bring the sauce to a boil. Drizzle small amount of sauce over chicken to serve. The sauce has a very rich flavor, so drizzle only a small amount and bring the remainder of the sauce to the table for people to add as desired.
