1 lb. Fresh or frozen shrimp
2 tsp. Smart Balance or other heart healthy margarine
1 ½ cloves garlic 2 tbsp. grated Fat-Free Parmesan cheese
2 tbsp chopped fresh parsley
Shell shrimp. Melt margarine in skillet. Add garlic and shrimp. Saute for 3 - 4 minutes or until shrimp turn pink. Sprinkle on parmesan cheese. Serve over brown or wild rice.
