Sauteed Spinach
12 cups fresh spinach
1 tbsp olive oil
1 garlic clove minced
Cover bottom of a large, lidded saute’ pan with oil. Add garlic and l stir on low heat for about 1
minute. Add spinach and toss to coat with oil and garlic. Cover and cook for 2- 3 minutes.
Uncover and toss again. Continue cooking until spinach is wilted but not soggy. Remove from
pan quickly and serve as a side dish or with a grilled chicken breast on top. Another variation is to add grape or cherry tomatoes to saute pan with the garlic. Add and cook the spinach in the
same way. (12 cups of spinach will completely fill the pan, but as spinach begins to cook it reduces in size
rapidly.)
