Barley and Pine Nut Pilaf

1 cup pearl barley
1/4 tsp pepper
1 oz. (1/6 cup) pine nuts
2 cup chicken broth
1 cup (1 bunch) green onions, chopped
Vegetable cooking spray
1/2 cup fresh parsley, chopped (or) 2 1/2 tbsp. dried

Preheat oven to 350 degrees. Rinse barley in cold water and drain. Spray a 10-inch skillet with vegetable cooking spray and brown nuts. Remove with slotted spoon and reserve. Saute green onions and barley until lightly toasted and remove from heat. Stir in nuts, parsley, and pepper; spoon into ungreased 2-quart casserole dish. Heat broth to boiling and pour over barley mix. Stir to blend well and bake 1 hour and 10 minutes. Makes 6 servings.
