Cucumber Dill Salad Dressing
1 cucumber, unpeeled and shredded
1/2 cup low-fat cottage cheese
1/2 cup low-fat plain yogurt or skim-milk buttermilk
1 tbsp. dried dillweed
1 clove garlic
1 teasponns fresh lemon juice
Salt and pepper to taste
Drain the cucumber in a colander. In a blender, combine the cucumber, cottage cheese, yogurt or buttermilk, dill garlic lemon juice salt and pepper. Process until smooth.
